Alongside Arimes, developer Jeremy Delk will serve as a 50-50 partner in the restaurant project, which aims to infuse the local dining scene with lighter seafood options and unique dishes. A notable bar area, structured around a horseshoe bar, will be a central attraction inside The V, featuring an array of cocktails and an extensive wine list.

The menu at The V is being designed to specialize in high-end fresh seafood, beef, and lamb, with seafood flown in daily from Chicago. Diners can expect to find classic dishes such as Dover sole meunière and bouillabaisse, as well as premium meat items including Wagyu beef and Colorado lamb. Prices will reflect the upscale nature of the restaurant, with entrees starting at $30-$35, and premium offerings like rack of lamb priced between $65-$70. For those seeking more budget-friendly options, a separate bar menu will include sandwiches and salads.

The V is part of The Vine project, which marks Lexington’s first commercial-to-residential conversion. The development will feature 21 condos, including a penthouse listing at $2.95 million. With most units already sold, The Vine is positioned directly across from Jeff Ruby’s Steakhouse and near Ethereal Brewing. A notable aspect of The Vine is the rooftop Vine Club, which aims to provide an exclusive social experience similar to New York’s Soho House. This exclusive club is expected to have a waitlist for memberships when it opens.

The Vine will also house a members-only spa, featuring a champagne bar and a hot tub area, catering to the demand for upscale amenities within the downtown area. Developer Jeremy Delk has highlighted the increasing interest in fine dining and social experiences, attributing it to recent market trends that demonstrate a clear appetite for more luxurious options in Lexington.

A preview event for family and friends is scheduled for April 2025, allowing close contacts to experience the ambiance and offerings ahead of the public opening. Cole Arimes plans to hire a chef de cuisine to manage day-to-day operations at The V, ensuring a focus on the quality and presentation of the dining experience.
